Seitan can either be made out of plain flour or with gluten (easier). I made it from scratch using plain flour. Seitan is a great substitute for meat in veggie meals 😀
First of all, you have to make a ball out of water and flour using about 2 cups of each, although you should carry on adding water until you feel it’s enough. Afterwards carry on pressing until the ball is no longer sticky.
Put ball in a bowl filled with water and let it rest for 40 minutes, after that change the water and leave it again. You’ll see that the water turns white … this means that the yeast is being released.
Afterwards, pour water over the ball until all the yeast has been completely released… gluten is the sticky part and the yeast is the white stuff.
Meanwhile you should do a veggie soup … I made mine with a red pepper, green pepper, onion, kombu seaweed, carrot and a mix of spices (dry and fresh); oregano, parsley, thyme, black pepper, etc. Add also some soy sauce and 2 veggie stocks
When the gluten ball is ready, place it in the soup pot and let it cook … to get all the flavours for 30-45 minutes.
